Ingredients:
- 1 cut whole chicken
- 6-8 small potatoes cut in 1/2 ( if using regular size, 2-3 potatoes cut in 1/6)
- 1 med. onion cut in 1/4
- 3-4 med. size tomatoes cut in 1/2
- 3-4 TBS veg. oil
- 3-4 cloves crushed/minced garlic
- 3-4 bay leaves
- 3-5 cloves
- 6-8 allspice
- 6-8 pepper corn
- 3-5 TBS paprika
- 2-3 jalapenos (in vinegar)
- Green olives with pits (amount optional)
- Salt
Preparation Directions:
In large pot pour oil, set to medium heat. Put chicken in and stir letting heat cook/brown chicken slightly. Add onions, tomatoes, potatoes, garlic, spices and some salt. Cover and stir every 5 mins or so to keep chicken from sticking to bottom. Once stew develops add jalapenos and olives. Stir carefully every 10 mins. Keep temperature at medium until chicken is fully cooked and potatoes are soft. Add more salt to taste.
